In Turkey, a winter afternoon might include cozying up with a warm cup of sahlep, a milky drink made from the powdered bulbs of wild orchids. Over-harvesting and reduced habitats have led to a shortage of sahlep powder, which is illegal to export. Unscrupulous sellers often dilute the powder with cornstarch and other additives. But others are looking for solutions. The World’s Durrie Bouscaren reports from Istanbul.
