In Turkey, a winter afternoon might include cozying up with a warm cup of sahlep, a milky drink made from the powdered bulbs of wild orchids. Over-harvesting and reduced habitats have led to a shortage of sahlep powder, which is illegal to export. Unscrupulous sellers often dilute the powder with cornstarch and other additives.
